March 1 - Fueling Up on Low-Fat FoodsYou will learn about different types of fats - the healthy ones as well as the ones to avoid. We will also discuss the dangers of a diet high in fat as it pertains to heart disease, cancer and other illnesses. We will make a delicious Roasted Red Pepper Hummus, a superb Sweet and Sour Stir-Fry, and a fantastic Brown Rice Pudding for dessert. We will also address how to properly read a food label (it's not what you think!). March 8 - Favoring FiberIn this class we will talk about the important role that fiber has in preventing and healing cancer as well as other illnesses. We will start with an Easy Bean Salad that is sure to be a hit at home. We will also make Quick Bean Burritos with Pan-Seared Portobello Mushrooms and Calabacitas. We will finish the class with a homemade Berry Applesauce topped with a Maple Oat Crunch. March 15 - Discovering Dairy AlternativesScience has proven there are many links between dairy consumption and many of the diseases prevalent in our society. We will talk about many alternatives and you will have a chance to sample each one (ex. Almond Milk, Rice Milk, Soy Milk, Coconut Milk, etc.). We will make a divine Asian Persuasion Salad with cruciferous vegetables and then a delicious White Bean Spread that you are sure to adore. We will make a Miso Soup that will take a twist on the traditional soup and finish off with a Chocolate Mousse that will have you smiling (expecially when you see what's in it!).
