Simply Versatile Pate a Choux


Though it may seem intimidating, pate a choux, a light pastry dough, is made with only four ingredients and cooked on the stovetop. Once mastered, it can be used to make a wide range of delicate pastries that can be filled with sweet custards and creams or savory vegetables and cheese. Learn how to make this simple pastry dough and, using a pastry bag, practice forming it into sweet profiteroles and eclairs, and savory gougeres. We’ll make pastries perfect to serve as small hors d’oeuvres or desserts. Tuition includes a $15 food fee.
